Orange Soufflé Recipe (sugar free)
Winter has now passed (happy dance) but unfortunately the amazing rich food that comes with winter is still evident. I have never really tried ‘sugar free’ so when I entered a competition and received some to trial, I was sure it would not live up to the wonderful (full of calories) classic sugar! I decided to make a soufflé, and low and behold it looked and even tasted the same- Yes I was wrong (take note peeps, 1st time), apparently you can use substitute sugar for everyday cooking.
WOODEN SPOON RATING:

NOW FOR THE RECIPE:
Preheat the oven to 180 degrees.
1. Slice 1/4 off the top of the orange.
Using a melon-baler or spoon and scoop out the orange from its shell.
Generously Butter each shell and sprinkle with sugar.
2. From the discarded flesh (and you will need another orange) measure out 180mls of orange juice
3. Over a medium heat, dissolve 30gms of sugar and water and stir until the sugar has dissolved (sweetener will take a little longer than sugar). Once dissolved, take off the heat.
4. Combine the corn flour and lemon juice together, then add to the sugar syrup.
Once combined add the orange juice and put aside
5. Using an electric mixer, whisk the egg whites to sift peaks. Add remaining (20gm) sugar until the mixture resembles firm peaks
6. Spoon 1 Tbs of egg whites to orange mixture, and mix until well combined. Slowly fold in the remainder of egg mixture, ensuring not to over work.
7. Spoon mixture into orange skins (filling to top). Use a palate knife ensure top is even.
8. Bake in oven for 12-15 mins or until top is golden brown.
To Serve:
Dust with icing sugar and serve immediately.
Voila: A very minimal calorie dessert that tastes like the full deal

TIPS:
- If you are not on the sugar-free bandwagon, substitute the 50gms of Navita for 50gms of caster sugar.
- Natural Sweetener = 10.2 calories vs. Caster sugar= 272 calories (this hopefully will convince you now)
